These vegetables are my store cupboard favourites. I can’t use white onions as they make me cry so the red onion is my best friend. It can be used in soups, stews, stir fries, curries, pasta sauces, chutneys, to name just a few. And every time I use an onion, nine times out of ten, I will use garlic. It can be crushed, roasted, sliced, mashed, mixed I could go on.. it can taste sweet, bitter, smooth, sharp, one just needs to know the best way to treat the beauty of a garlic clove.
Courgettes, have basically become my new spaghetti, they have overruled grated carrot and get thrown into almost every meal. They can be eaten raw like a cucumber and cooked in a number of different ways.
These three are the most versatile vegetables I believe, and throughout my blog I will show you some of the easiest and tastiest ways of using them from humous to ratatouille to flavoured oils.
